Lemon Blueberry Crumb Cake Recipe
Ingredients
1 cup all-purpose flour
1 cup blueberries (fresh or frozen)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
1/2 cup plain yogurt
1/4 cup vegetable oil
1 large egg
1 tablespoon lemon juice
Method
Preheat the oven to 180°C. Grease a baking dish or line it with baking paper.
In a bowl, combine flour, baking powder, baking soda, and salt. Mix well.
In another bowl, whisk together sugar, yogurt, vegetable oil, egg, and lemon juice until smooth.
Gradually add the dry ingredients to the wet ingredients, stirring gently. Then, fold in the blueberries.
Pour the batter into the prepared dish and bake for about 30 minutes or until golden brown and a skewer comes out clean.
