Fluffy Buttermilk Pancakes Recipe
Ingredients
1 ½ cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ¼ cups buttermilk
1 large egg
3 tablespoons melted butter
1 teaspoon vanilla extract
Method
Start by whisking together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well combined.
Pour the wet ingredients into the dry mixture. Stir gently until just combined, being careful not to overmix.
Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
Scoop about ¼ cup of the batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
