Back to School Lunches: Veggie Wraps
Ingredients
1 large cucumber, thinly sliced
2 large carrots, grated
1 red bell pepper, sliced
1 avocado, mashed
1 lemon, juiced
2 large tortillas
150 ml hummus
1 cup baby spinach
Salt and pepper, to taste
Method
Start by preparing the vegetables. Cut the cucumber, slice the bell pepper, and grate the carrots.
Mash the avocado in a bowl and mix in the lemon juice. Season with salt and pepper as desired.
Spread a layer of hummus over each tortilla, covering the entire surface.
Add the mashed avocado on top of the hummus, then layer the spinach, cucumber, carrots, and bell pepper.
Roll up each tortilla tightly, slice into smaller sections, and enjoy!
