Ingredients
4 whole-grain or multigrain wraps
1 can (400g) chickpeas, drained and rinsed
2 medium tomatoes, diced
1 medium cucumber, diced
1 cup spinach or mixed salad greens
1 small red onion, finely chopped
1 tablespoon lemon juice
1 teaspoon cumin powder
Salt, to taste
Black pepper, to taste
Method
1. Start by mashing the chickpeas in a bowl until they are mostly smooth.
2. Add the diced tomatoes, cucumber, spinach, and red onion to the bowl.
3. Sprinkle in the lemon juice, cumin, salt, and black pepper. Mix everything well until combined.
4. Lay out the wraps on a flat surface and evenly distribute the chickpea mixture onto each one.
5. Roll the wraps tightly and cut them in half. Serve immediately or wrap in foil for later.
