Ingredients
– 2 cups of chopped kale
– 1 cup of cooked beans (any type)
– 2 tablespoons of olive oil
– 3 cloves of garlic, minced
– 1 teaspoon of red pepper flakes
– 1 cup of vegetable broth
– 1 lemon, juiced
– Salt to taste
– Pepper to taste
– 1/4 cup of grated cheese (optional)
Method
1. Heat the olive oil in a large skillet over medium heat.
2. Add the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.
3. Stir in the chopped kale and cook until it wilts, which takes about 5 minutes.
4. Pour in the vegetable broth and add the cooked beans. Simmer for another 5 minutes.
5. Squeeze lemon juice over the dish, then season with salt and pepper. If desired, sprinkle cheese on top before serving.
