3 Bean Soup Recipe
Ingredients
– 1 cup chopped onion
– 1 cup chopped carrots
– 2 cloves garlic, minced
– 1 can (400 g) diced tomatoes
– 1 can (400 g) kidney beans, drained and rinsed
– 1 can (400 g) black beans, drained and rinsed
– 1 can (400 g) pinto beans, drained and rinsed
– 1 teaspoon ground cumin
– 4 cups vegetable broth
– Salt and pepper to taste
Method
1. Heat a large pot over medium heat. Add chopped onion and carrots, cooking until soft for about 5 minutes.
2. Stir in the minced garlic and cook for an additional minute.
3. Add the diced tomatoes, vegetable broth, and all the beans into the pot. Mix well.
4. Sprinkle in the ground cumin and add salt and pepper as needed. Bring the mixture to a boil.
5. Reduce the heat and let it simmer for 20 minutes, stirring occasionally.
