Ingredients

– 2 cups fresh spinach
– 1 tablespoon olive oil
– 2 cloves garlic, minced
– 300 g pasta (your choice)
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 cup grated cheese
– 1/4 cup pine nuts
– 1/4 cup reserved pasta water
– Juice of 1 lemon

Method

1. Begin by cooking the pasta according to the package instructions. Make sure to add salt to the water for flavour.
2. While the pasta cooks, heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté until fragrant.
3. Toss in the fresh spinach and cook until wilted, stirring occasionally. This will only take about 2-3 minutes.
4. Once the pasta is ready, reserve some pasta water before draining the rest. Combine cooked pasta with the spinach mixture in the pan.
5. Stir in salt, black pepper, cheese, pine nuts, lemon juice, and reserved pasta water. Mix well until everything is evenly coated and heated through.
