Ingredients
– 1 can (400g) black beans, drained and rinsed
– 1 cup cooked rice
– 1 cup breadcrumbs
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 tsp ground cumin
– 1 tsp smoked paprika
– 1 egg, beaten
– Salt, to taste
– Pepper, to taste
Method
1. Preheat your oven to 200°C (400°F) and line a baking tray with baking paper.
2. In a large bowl, mash the black beans with a fork until slightly smooth, leaving some chunks for texture.
3. Add the cooked rice, breadcrumbs, chopped onion, garlic, cumin, paprika, and the beaten egg. Mix everything together.
4. Season the mixture with salt and pepper. Shape it into burger patties.
5. Place the patties on the baking tray and bake them for 30 minutes, flipping halfway through for even cooking.
