Ingredients
– 2 medium zucchinis
– 1 cup marinara sauce
– 400 g firm tofu
– 1 cup spinach, chopped
– 1 teaspoon dried oregano
– 1 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 1 cup nutritional yeast
– 1 cup sliced mushrooms
Method
1. Preheat your oven to 180°C (350°F).
2. Slice the zucchinis into thin strips.
3. In a bowl, mash the tofu and mix in spinach, oregano, garlic powder, salt, pepper, and nutritional yeast.
4. Spread some marinara sauce on the bottom of a baking dish. Layer zucchini, tofu mixture, and mushrooms. Repeat until ingredients are used.
5. Top with remaining marinara sauce and cover with foil. Bake for 30 minutes, then remove foil and bake for another 15 minutes until bubbly.
