Ingredients
– 1 cup of cooked lentils
– 1 cup of shelled edamame
– 1 cup of cherry tomatoes, halved
– 1 cucumber, diced
– 1/4 cup of red onion, finely chopped
– 1/4 cup of fresh parsley, chopped
– 60 ml of olive oil
– 30 ml of lemon juice
– Salt and pepper, to taste
Method
1. Combine the cooked lentils and edamame in a large bowl.
2. Add the cherry tomatoes, cucumber, red onion, and parsley to the mixture.
3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
4. Pour the dressing over the salad and mix everything well.
5. Serve immediately or chill it in the fridge for an hour before enjoying.
