Ingredients
– 1 ½ cups rolled oats
– 2 ripe bananas
– 1/3 cup honey or maple syrup
– 1 cup milk
– 1 tsp vanilla extract
– 1 tsp baking powder
– ½ tsp baking soda
– ½ tsp cinnamon
– 1 egg
– ½ cup chopped nuts or chocolate chips (optional)
Method
1. Preheat the oven to 180°C (350°F) and line a muffin tray with paper cases.
2. In a large bowl, mash the bananas with a fork until smooth.
3. Stir in the honey or maple syrup, egg, milk, and vanilla extract until everything is mixed well.
4. Add the rolled oats, baking powder, baking soda, and cinnamon to the bowl. Mix until just combined. If desired, fold in the nuts or chocolate chips.
5. Pour the batter into the muffin cases and bake for 18-20 minutes or until a skewer comes out clean.
