Method
1. Start by grating the zucchinis and yellow squashes. Place them in a clean cloth and squeeze out the extra moisture.
2. In a big bowl, mix the grated vegetables with breadcrumbs, parmesan, eggs, garlic powder, onion powder, salt, and pepper. Stir everything until combined.
3. Preheat the air fryer to 190 degrees Celsius. Shape the mixture into small fritters, about the size of your palm.
4. Spray the air fryer basket lightly with olive oil. Place the fritters in a single layer without touching each other.
5. Cook the fritters for 10-12 minutes until they are golden brown. Flip them halfway through cooking for even crispiness.
