Ingredients
– 1 tablespoon olive oil
– 1 red onion, diced
– 1 bell pepper, diced
– 2 cloves garlic, minced
– 400 g canned black beans, drained and rinsed
– 400 g canned diced tomatoes
– 1 tablespoon taco seasoning
– 2 cups corn, frozen or canned
– 1 cup shredded cheese
– Chopped cilantro for garnish
Method
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced onion and bell pepper, cooking until they softens, about 5 minutes.
3. Stir in the minced garlic and cook for another minute.
4. Mix in the black beans, diced tomatoes, taco seasoning, and corn. Simmer for about 5 minutes until heated through.
5. Sprinkle the cheese on top and let it melt. Garnish with chopped cilantro before serving.
