Ingredients
– 2 cups of penne pasta
– 1 tablespoon of olive oil
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 zucchini, diced
– 1 red bell pepper, diced
– 400 g canned tomatoes
– 1 teaspoon of dried basil
– Salt to taste
– 1 cup of grated cheese
Method
1. Boil a large pot of salted water. Add the penne pasta and cook according to package instructions. Drain and set aside.
2. Heat olive oil in a skillet over medium heat. Sauté the chopped onion and minced garlic until they become soft.
3. Add the diced zucchini and red bell pepper to the skillet. Cook until the vegetables are tender.
4. Pour in the canned tomatoes and add dried basil. Season with salt. Simmer the mixture for about 5 minutes.
5. Stir the cooked pasta into the skillet and mix well. Top with grated cheese before serving.
