Ingredients
– 2 cups cooked basmati rice
– 1 cup mixed vegetables (like carrots, peas, and bell peppers)
– 1 cup cooked chickpeas
– 2 tablespoons oil
– 1 teaspoon cumin seeds
– 1 teaspoon turmeric powder
– 1 teaspoon garam masala
– Salt to taste
– 4 rotis or tortillas
– Fresh coriander for garnish
Method
1. Heat oil in a large pan over medium heat.
2. Add cumin seeds and let them sizzle for a few seconds.
3. Stir in mixed vegetables and cook until they soften.
4. Add cooked chickpeas, turmeric, garam masala, and salt. Mix well and cook for another 5 minutes.
5. Serve the vegetable mix over the cooked basmati rice. Enjoy it with the rotis or tortillas and garnish with fresh coriander.
