Ingredients
– 500 g beef mince
– 400 g canned black beans, drained and rinsed
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 tsp ground cumin
– 1 tsp chili powder
– 400 g canned diced tomatoes
– 8 flour tortillas
– 200 g shredded cheese
– 100 ml sour cream
Method
1. Preheat your oven to 180°C (350°F).
2. In a large pan, cook the minced beef over medium heat until browned. Add onion and garlic, cooking until softened.
3. Stir in cumin, chili powder, tomatoes, and black beans. Cook for about 5 minutes until heated through.
4. Place some beef mixture in the center of each tortilla. Sprinkle with cheese, then roll them up and place seam-side down in a baking dish.
5. Pour remaining beef mixture on top, cover with more cheese, and bake for 20 minutes. Serve with sour cream.
