Ingredients
500 g chicken breast
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1/4 cup olive oil
1/4 cup red wine vinegar
1 cup fresh parsley, chopped
1/2 tsp red pepper flakes
8 small corn tortillas
Method
1. Start by seasoning the chicken with salt, black pepper, garlic powder, and onion powder. Make sure to coat it evenly.
2. Heat a grill or frying pan on medium-high heat and add the seasoned chicken. Cook for about 6-7 minutes on each side until fully cooked.
3. While the chicken cooks, whisk together olive oil, red wine vinegar, chopped parsley, and red pepper flakes in a bowl. This will be your chimichurri sauce.
4. Once the chicken is done, let it rest for a few minutes before slicing it into thin strips.
5. Warm the corn tortillas and fill them with sliced chicken and chimichurri sauce. Serve and enjoy.
