Chicken Broccoli Alfredo (Lightened-Up)
Ingredients
500 g chicken breast, diced
300 g broccoli florets
1 tablespoon olive oil
2 cloves garlic, minced
250 ml low-fat milk
100 g grated parmesan cheese
200 g whole wheat fettuccine
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Method
1. Cook the fettuccine according to the package instructions. Add the broccoli for the last 3 minutes of cooking. Drain and set aside.
2. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until browned, about 5-7 minutes.
3. Stir in the minced garlic and cook for another 1 minute.
4. Pour in the low-fat milk and bring to a simmer. Add the parmesan cheese and Italian seasoning, stirring until melted and smooth.
5. Combine the chicken and sauce with the fettuccine and broccoli. Season with salt and pepper, then garnish with parsley before serving.
