Vegan Chicken Soup Recipe
Ingredients
1 tbsp olive oil
1 medium onion, chopped
2 garlic cloves, minced
3 medium carrots, sliced
2 celery stalks, chopped
1/2 tsp dried thyme
1/2 tsp dried oregano
1L vegetable broth
300g plant-based chicken pieces
1 cup frozen peas
Method
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until it is soft.
Stir in minced garlic, sliced carrots, and chopped celery.
Sprinkle in the thyme and oregano; cook for a few minutes.
Pour in vegetable broth, add plant-based chicken pieces and frozen peas; simmer for 10 minutes.
