Chicken Rendang Recipe
Ingredients
1 kg chicken, cut into pieces
2 tablespoons vegetable oil
1 large onion, chopped
4 cloves garlic, minced
1 tablespoon ginger, grated
1 tablespoon turmeric powder
1 can (400 ml) coconut milk
2 tablespoons soy sauce
2 tablespoons brown sugar
2 tablespoons lime juice
Method
1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until it becomes soft.
2. Stir in the minced garlic, grated ginger, and turmeric powder. Sauté for a few minutes until fragrant.
3. Add the chicken pieces to the pot, stirring well to coat them in the mixture. Cook for about 5 minutes until they start to brown.
4. Pour in the coconut milk, soy sauce, and brown sugar. Mix everything together and bring it to a simmer.
5. Cover the pot and let it cook on low heat for about 40 minutes. Stir occasionally. In the last 5 minutes, add the lime juice before serving.
