Ingredients
500 g carrots, peeled and sliced
2 tablespoons olive oil
1 tablespoon honey
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried thyme
½ cup vegetable broth
2 tablespoons lemon juice
Fresh parsley, chopped (for garnish)
Method
1. Heat the olive oil in a large frying pan over medium heat.
2. Add the sliced carrots and sauté for about 5 minutes until they start to soften.
3. Stir in the honey, salt, black pepper, thyme, and vegetable broth.
4. Cover the pan and let it cook for another 10 minutes, stirring occasionally.
5. Remove from heat, add lemon juice, and garnish with fresh parsley before serving.
