Ingredients
2 cups cooked rice
1 cup frozen mixed vegetables
1 cup cooked chicken, shredded
1/2 cup soy sauce
2 tablespoons sesame oil
2 eggs, beaten
2 green onions, chopped
1 teaspoon garlic, minced
1 teaspoon ginger, minced
Salt and pepper to taste
Method
1. Heat sesame oil in a large skillet over medium heat.
2. Add garlic and ginger, stirring for about 1 minute until fragrant.
3. Toss in the mixed vegetables and cook until warmed through.
4. Push the veggies to one side and pour in the beaten eggs. Scramble until fully cooked.
5. Add rice, chicken, soy sauce, salt, and pepper. Mix everything together and cook for 3-4 minutes until heated through.
