Spinach Lasagna Recipe
Ingredients
500 g fresh spinach
1 tablespoon olive oil
1 chopped onion
2 cloves garlic, minced
1 teaspoon dried oregano
450 g ricotta cheese
1 egg
4 cups marinara sauce
9 lasagna sheets
2 cups grated cheese
Method
1. Preheat the oven to 190°C. Heat olive oil in a pan over medium heat. Sauté onion and garlic until soft.
2. Add the spinach to the pan and cook until wilted. Stir in oregano, then remove from heat.
3. In a bowl, mix ricotta cheese, egg, and half the grated cheese together until combined.
4. In a baking dish, spread some marinara sauce on the bottom. Layer 3 lasagna sheets, half the spinach mixture, half the ricotta mixture, and top with more marinara sauce.
5. Repeat the layers, finishing with remaining marinara sauce and top with the rest of the grated cheese. Bake for 30-35 minutes until bubbly and golden.
