Ingredients
1 sheet puff pastry (thawed)
1 large onion (sliced)
2 tablespoons olive oil
50 ml balsamic vinegar
100 g goat cheese (crumbled)
1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
Salt and pepper (to taste)
1 egg (beaten, for egg wash)
1 tablespoon honey (optional)

Method
1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
2. Heat the olive oil in a pan over medium heat, then add the sliced onion. Cook until soft and golden brown, stirring occasionally, for about 15 minutes.
3. Pour in the balsamic vinegar and let it simmer for a few minutes until thickened. Season with salt, pepper, and thyme.
4. Roll out the puff pastry and cut it into squares. Place them on the prepared tray.
5. Top each pastry square with the onion mixture and crumbled goat cheese, then brush the edges with egg wash. Bake for 15-20 minutes until golden.
