Zucchini Pancakes Recipe
Ingredients
2 medium zucchinis, grated
1 teaspoon salt
1/2 cup plain flour
1/2 teaspoon baking powder
2 large eggs
1/4 cup grated cheese
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 cup chopped fresh herbs (such as parsley or dill)
Vegetable oil for frying
Method
1. Start by grating the zucchinis into a bowl and sprinkle salt over them. Let them sit for about 10 minutes to draw out moisture.
2. After that, squeeze the grated zucchini in a clean cloth to remove excess water.
3. Mix flour, baking powder, eggs, cheese, black pepper, garlic powder, and herbs in a large bowl. Add the zucchini and stir well.
4. Heat some oil in a frying pan over medium heat. Spoon about 1/4 cup of the mixture into the pan for each pancake.
5. Cook for 3 to 4 minutes on each side until golden brown. Serve warm.
