### Mini Ricotta Doughnuts Recipe
#### Ingredients
– 250g ricotta cheese
– 2 eggs
– 1 tsp vanilla extract
– 1 cup all-purpose flour
– 1 tbsp sugar
– 1 tsp baking powder
– Pinch of salt
– Vegetable oil for frying
– Powdered sugar for dusting
– Honey, for drizzling (optional)
#### Method
1. Combine ricotta, eggs, and vanilla in a bowl and mix until smooth.
2. In another bowl, mix flour, sugar, baking powder, and salt.
3. Gradually add dry ingredients to the ricotta mixture, stirring until a soft dough forms.
4. Heat oil in a deep pan over medium heat. Drop tablespoon-sized dough portions into hot oil and fry until golden brown on all sides.
5. Remove doughnuts with a slotted spoon, drain on paper towels, and dust with powdered sugar. Optional: Drizzle with honey before serving.
