Ingredients
– 4 chicken sausages
– 400 g canned white beans, drained
– 1 can (400 g) diced tomatoes
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 teaspoon dried oregano
– 1 teaspoon smoked paprika
– 2 cups spinach, chopped
– 1 tablespoon olive oil
– Salt and pepper, to taste
Method
1. Preheat the oven to 200°C.
2. In a large oven-safe dish, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until softened.
3. Slice the chicken sausages and add them to the dish. Cook for about 5 minutes until they are slightly brown.
4. Stir in the diced tomatoes, drained white beans, spinach, oregano, smoked paprika, salt, and pepper. Mix thoroughly.
5. Bake in the oven for 25-30 minutes or until everything is heated through and golden.
