Method
1. Rinse the quinoa under cold water, then add it to a saucepan with the vegetable broth.
2. Bring the mixture to a boil, then reduce the heat and simmer for about 15 minutes until the quinoa is fluffy.
3. In a large bowl, combine the cooked quinoa with black beans, corn, red bell pepper, and red onion.
4. Drizzle lime juice over the mixture and add cumin, salt, and pepper. Stir everything gently to combine.
5. Finally, top the salad with diced avocado just before serving.
