Ingredients

– 2 cups jasmine rice
– 400 ml coconut milk
– 1 cup chicken broth
– 1 tablespoon fish sauce
– 1 tablespoon sugar
– 1 teaspoon salt
– 200 g chicken breast, diced
– 1 red bell pepper, sliced
– 1 cup broccoli florets
– 1 lime, cut into wedges

Method

1. Rinse the jasmine rice under cold water until the water runs clear.
2. In a pot, combine the rinsed rice, coconut milk, chicken broth, fish sauce, sugar, and salt.
3. Bring the mixture to a boil, then reduce the heat and cover. Cook for 15 minutes or until the rice is tender.
4. While the rice cooks, stir-fry the diced chicken in a pan until cooked through. Add bell pepper and broccoli, cooking until tender.
5. Serve the rice topped with the stir-fried chicken and vegetables. Garnish with lime wedges.
