Ingredients
– 4 cups kale, chopped
– 1 cup croutons
– ½ cup Parmesan cheese, grated
– ¼ cup olive oil
– 2 tablespoons lemon juice
– 1 teaspoon Dijon mustard
– 1 small garlic clove, minced
– Salt to taste
– Pepper to taste
Method
1. Start by washing and tearing the kale into bite-sized pieces. Place them in a large bowl.
2. In a smaller bowl, whisk together olive oil, lemon juice, Dijon mustard, and garlic. Season with salt and pepper.
3. Pour the dressing over the kale and massage it in to help soften the leaves.
4. Add the croutons and Parmesan cheese. Gently toss everything together until well mixed.
5. Serve immediately on plates, or enjoy it later after chilling in the fridge for a bit.
