Ingredients
– 500 g shrimp, peeled and deveined
– 1 cup arborio rice
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 lemon, juiced and zested
– 1 L chicken or vegetable broth
– 100 g parmesan cheese, grated
– 2 tablespoons olive oil
– 1/4 cup fresh parsley, chopped
– Salt and pepper, to taste
Method
1. Heat olive oil in a large pan over medium heat.
2. Add the chopped onion and garlic. Cook until softened, about 2-3 minutes.
3. Stir in the arborio rice, mixing well for 1-2 minutes until it begins to look glassy.
4. Gradually pour in the broth, one ladle at a time, stirring frequently. Wait until the liquid is absorbed before adding more.
5. Once the rice is creamy and tender, mix in the shrimp, lemon juice, lemon zest, parmesan cheese, parsley, salt, and pepper. Cook for a few more minutes until the shrimp are pink and cooked through.
