3. Process the mixture until it reaches a fine, powdery texture. You may need to scrape the sides a few times to ensure everything gets mixed well.
4. Taste the mixture and adjust the seasoning if needed, adding more salt or lemon juice for extra flavor.
5. Store the vegan parmesan in an airtight container in the fridge. Use it to sprinkle on pasta or salads.
