Ingredients

– 1 cup buttermilk
– 4 large eggs
– 1 teaspoon vanilla extract
– 1 teaspoon ground cinnamon
– 8 slices of bread
– 2 tablespoons butter
– 1 cup blackberries
– 1/4 cup maple syrup
– 1 tablespoon lemon juice
– Pinch of salt

Method

1. In a bowl, whisk together buttermilk, eggs, vanilla extract, cinnamon, and salt until well combined.
2. Heat a frying pan over medium heat and melt one tablespoon of butter.
3. Dip each slice of bread into the batter, letting it soak for a few seconds on each side.
4. Cook the soaked slices in the pan for 2 to 3 minutes on each side, until golden brown.
5. In another pot, combine blackberries, maple syrup, and lemon juice. Heat on low until the berries break down. Serve the toast warm with the compote on top.
