Ingredients
– 3 ripe bananas, mashed
– 1/3 cup (80 ml) melted coconut oil
– 1/2 cup (100 g) brown sugar
– 1/4 cup (60 ml) almond milk
– 1 tsp vanilla extract
– 1 tsp baking soda
– 1/4 tsp salt
– 1 1/2 cups (190 g) flour
– 1/2 cup (90 g) chocolate chips
– 1/2 tsp cinnamon
Method
1. Preheat the oven to 180°C. Line a muffin tin with paper liners.
2. In a large bowl, combine the mashed bananas and melted coconut oil. Stir until well mixed.
3. Add the brown sugar, almond milk, vanilla extract, baking soda, salt, and cinnamon. Mix everything together.
4. Gradually include the flour. Stir until just combined, then fold in the chocolate chips.
5. Evenly scoop the batter into the muffin tin. Bake for 18-20 minutes, or until a toothpick comes out clean.
