Ingredients
– 500 g chicken breasts, diced
– 1 cup broccoli florets
– 1 cup sliced carrots
– 1 tablespoon olive oil
– 2 cloves garlic, minced
– 2 tablespoons soy sauce
– 1 tablespoon cornstarch
– 1 cup chicken broth
– ½ cup cooked rice
– Salt and pepper to taste
Method
1. Heat the olive oil in a large skillet over medium heat.
2. Add the minced garlic and diced chicken. Cook until the chicken turns golden brown.
3. Toss in the broccoli and carrots. Stir and cook for about 5 minutes.
4. In a separate bowl, mix the soy sauce, cornstarch, and chicken broth. Pour the mixture over the cooked chicken and vegetables.
5. Simmer for 3-4 minutes until the sauce thickens. Serve over cooked rice and season with salt and pepper.
