Ingredients
– 1 kg chicken pieces
– 500 ml buttermilk
– 1 tsp salt
– 1 tsp black pepper
– 1 tsp garlic powder
– 1 tsp paprika
– 2 cups plain flour
– Oil for frying
Method
1. Begin by soaking the chicken in buttermilk. Place chicken pieces in a bowl and cover with buttermilk. Let it sit for at least 2 hours, or overnight, in the fridge.
2. Prepare a mixture for seasoning. In a large bowl, combine salt, black pepper, garlic powder, and paprika. Mix together well.
3. Next, coat the chicken. Remove pieces from buttermilk and let excess liquid drip off. Dredge the chicken in the seasoned flour until fully coated.
4. Heat oil for frying in a deep pan over medium heat. You will need enough oil to submerge the chicken halfway.
5. Fry chicken pieces in batches for about 10-15 minutes until golden brown and cooked through. Use a thermometer to check chicken reaches 75 degrees Celsius.
