Ingredients
– 4 cups of diced carrots
– 1 cup of chopped onion
– 2 cloves of minced garlic
– 3 tablespoons of grated fresh ginger
– 4 cups of vegetable broth
– 1 tablespoon of olive oil
– 1 teaspoon of salt
– 1/2 teaspoon of black pepper
– 1 tablespoon of honey
– 1/2 cup of coconut milk
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the onions, garlic, and ginger. Sauté for about 5 minutes until the onions turn soft.
3. Stir in the carrots, salt, and pepper. Cook for an additional 5 minutes.
4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer for 20 minutes until the carrots are tender.
5. Blend the soup until smooth. Stir in honey and coconut milk before serving.
