Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 500 g broccoli, chopped
– 1 medium potato, peeled and diced
– 4 cups vegetable broth
– 1 cup milk
– Salt and pepper to taste
– Optional: grated cheese for serving
Method
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until it becomes soft, about 5 minutes.
3. Stir in minced garlic, followed by chopped broccoli and diced potato.
4. Pour in vegetable broth. Bring the mixture to a boil, then reduce heat and simmer until vegetables are tender, around 15 minutes.
5. Blend the soup until smooth. Stir in milk. Season with salt and pepper. Serve hot, adding cheese if desired.
