Ingredients
– 1.5 cups rice
– 500 ml vegetable broth
– 1 tablespoon olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 red bell pepper, chopped
– 1 zucchini, chopped
– 1 cup frozen peas
– 1 teaspoon cumin
– Salt and pepper to taste
Method
1. Rinse the rice under cold water until it runs clear.
2. Heat olive oil in a large pot over medium heat.
3. Add onion and garlic, cooking until softened.
4. Stir in bell pepper, zucchini, and rice; cook for a few more minutes.
5. Pour in vegetable broth, peas, cumin, and season with salt and pepper. Bring to a boil, then reduce heat and simmer covered for about 15-20 minutes until rice is cooked.
