Method
- Begin by slicing the capsicums and onion into strips.
- Heat olive oil in a large pan over medium heat.
- Add the sliced veggies to the pan. Cook for about 5-7 minutes until they are tender.
- Sprinkle taco seasoning, garlic powder, ground cumin, salt, and pepper over the veggies. Stir to combine.
- Cook for another minute to let the spices blend in. If desired, garnish with fresh coriander before serving.
