Ingredients
– 4 cups broccoli florets
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 4 cups vegetable broth
– 2 cups milk
– 1 ½ cups shredded cheese
– ½ cup cream cheese
– 2 tablespoons olive oil
– 1 teaspoon salt
– ½ teaspoon pepper
Method
1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until soft.
2. Stir in the broccoli florets and sauté for about 5 minutes, mixing well.
3. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer until the broccoli is tender, roughly 10 minutes.
4. Add in the milk, cream cheese, salt, and pepper. Use an immersion blender to blend the soup until it’s smooth.
5. Mix in the shredded cheese, stirring until it melts. Serve hot in bowls and enjoy.
