Ingredients
– 2 cups cooked rice
– 500 g chicken breast, diced
– 1 cup buffalo sauce
– 1 tablespoon olive oil
– 1 cup diced celery
– 1 cup shredded carrots
– 1 cup chopped green onions
– 1 cup blue cheese (or feta)
– 1 tablespoon vinegar
– 1 teaspoon garlic powder
Method
1. Start by heating olive oil in a pan over medium heat. Add the diced chicken and cook until it turns golden brown, about 5-7 minutes.
2. Pour buffalo sauce over the chicken and stir, cooking for another 5 minutes until the chicken is well coated.
3. While the chicken cooks, prepare the rice according to package instructions if it’s not already cooked.
4. In a large bowl, mix cooked rice, celery, carrots, green onions, vinegar, and garlic powder.
5. Serve the rice mixture in bowls, then top with the buffalo chicken. Add blue cheese on top for extra flavor.
