Ingredients
- 3 cups chopped dates
- 2 cups boiling water
- 1 teaspoon baking soda
- 100g butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 cup toffee sauce (store-bought or homemade)
Method
- Preheat the oven to 180°C (350°F). Grease a baking dish.
- Put the chopped dates and boiling water in a bowl. Mix in baking soda and let it cool down.
- In another bowl, cream together the butter and brown sugar. Add the eggs and vanilla extract, mixing until smooth.
- Add the cooled date mixture to the butter mixture. Combine well, then fold in the flour and baking powder.
- Pour the batter into the greased dish. Bake for about 30-35 minutes until a skewer comes out clean. Serve warm with toffee sauce.
