Method

1. Heat the olive oil in a large skillet over medium heat.
2. Add the chopped onion and minced garlic, cooking for about 2 minutes until soft.
3. Stir in the diced chicken breast, cooking until it turns golden brown.
4. Mix in the sliced capsicum, canned tomatoes, oregano, and paprika. Let it simmer for 10 minutes.
5. Lastly, fold in the spinach and season with salt and pepper. Cook until the spinach wilts.
