Ingredients

– 8 fresh colocasia leaves
– 1 cup grated coconut
– 2 medium tomatoes, chopped
– 2 tablespoons tamarind paste
– 1 teaspoon turmeric powder
– 1 teaspoon chili powder
– 1 teaspoon mustard seeds
– 2 tablespoons vegetable oil
– Salt to taste
– 1 cup water

Method

1. Wash the colocasia leaves thoroughly and remove the thick stems.
2. Chop the leaves into small pieces and set them aside.
3. In a pan, heat the vegetable oil and add mustard seeds. Wait until they start popping.
4. Stir in the chopped tomatoes, spices, and tamarind paste. Cook until the tomatoes soften.
5. Add the colocasia leaves and water to the pan. Mix well and simmer until leaves are tender.
