Savory Polenta Casserole With Sausage And Spinach Delight

Ingredients

– 1 cup polenta
– 1 litre chicken or vegetable stock
– 2 tablespoons olive oil
– 1 onion, chopped
– 3 cloves garlic, minced
– 250 g sausage, sliced
– 200 g fresh spinach
– 1 teaspoon dried oregano
– 1 cup grated cheese
– Salt and pepper to taste

Method

1. Boil the stock in a pot over medium heat. Slowly whisk in polenta until it thickens.
2. In a separate pan, heat olive oil. Sauté onion and garlic until soft.
3. Add sausage slices to the pan and cook until browned. Stir in spinach until wilted.
4. Mix the sausage and spinach into the polenta. Season with oregano, salt, and pepper.
5. Transfer everything to a baking dish. Sprinkle cheese on top. Bake at 180°C for 25 minutes or until bubbly.
