Delicious Duck Ragu Recipe: Elevate Your Italian Cooking Tonight

Ingredients

– 1 duck, cut into pieces
– 1 onion, chopped
– 2 carrots, diced
– 2 celery sticks, diced
– 4 cloves garlic, minced
– 800 ml canned tomatoes, crushed
– 250 ml red wine
– 2 cups chicken or duck stock
– 2 teaspoons dried thyme
– Salt and pepper, to taste

Method

1. Heat a large pot over medium-high heat and add the duck pieces. Brown them on all sides, then remove from the pot.
2. In the same pot, add the chopped onion, carrots, and celery. Cook for about 5 minutes until they soften.
3. Stir in the minced garlic and cook for another minute.
4. Add the crushed tomatoes, red wine, stock, and thyme. Mix well, then return the browned duck to the pot.
5. Cover the pot and simmer on low heat for about 1.5 to 2 hours, until the duck is tender. Season with salt and pepper before serving.
