Ingredients
– 200 g dark chocolate (roughly chopped)
– 1/2 cup unsalted butter
– 3/4 cup sugar
– 1/4 cup cocoa powder
– 4 large eggs
– 1 teaspoon vanilla extract
– 1 cup cherries (pitted and halved)
– 1/2 cup whipped cream
– Optional: icing sugar for dusting
– Optional: extra cherries for decoration
Method
1. Preheat the oven to 180°C (350°F) and grease a 9-inch round cake pan.
2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth.
3. Remove the bowl from heat. Mix in the sugar and cocoa powder until combined.
4. Add eggs one at a time, then stir in the vanilla extract and cherries. Ensure everything is well mixed.
5. Pour the batter into the prepared pan and bake for about 25 minutes. Cool before removing from the pan. Serve with whipped cream and decorate with extra cherries if desired.
