Easy Veggie Curry Recipe: Healthy & Delicious Plant-Based Delight

Ingredients

– 1 tablespoon oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 tablespoon ginger, grated
– 2 cups mixed vegetables (carrots, peas, bell peppers)
– 1 can (400 ml) diced tomatoes
– 1 tablespoon curry powder
– 1 can (400 ml) coconut milk
– Salt to taste
– Fresh coriander for garnish

Method

1. Heat the oil in a large pan over medium heat.
2. Add the chopped onion, garlic, and ginger. Sauté until the onion is clear.
3. Stir in the mixed vegetables and cook for about 5 minutes.
4. Pour in the diced tomatoes and curry powder, mixing well. Simmer for 10 minutes.
5. Add the coconut milk and salt. Cook for another 5 minutes and then serve, garnished with fresh coriander.
