Ingredients
– 1 butternut squash, medium size
– 3 tbsp olive oil
– 1 tsp salt
– 1/2 tsp black pepper
– 1/2 tsp ground cumin
– 1/4 cup walnuts, chopped
– 4 cups fresh spinach
– 1/4 cup feta cheese, crumbled
– 1 apple, diced
– 2 tbsp balsamic vinegar
Method
1. Preheat the oven to 200°C.
2. Cut the butternut squash in half, scoop out the seeds, and peel it. Then, chop it into cubes.
3. Toss the butternut squash cubes with olive oil, salt, black pepper, and cumin in a large bowl.
4. Spread the mixture on a baking sheet and roast in the oven for about 25-30 minutes, or until tender.
5. Combine the spinach, walnuts, feta cheese, apple, and balsamic vinegar in a bowl. Add the roasted squash when it’s ready and mix gently.
